Origin: From a single vineyard located in the Springton sub region of the high altitude and cool climate Eden Valley. The soils here are formed from metamorphic actions with layers of thin soils over rock, ensuring low yields and a minerality which makes Riesling the classic variety of this region.
Winemaking: Gently pressed and cool fermented at 15 degrees in stainless steel tanks over several weeks. Gentle lees stirring over several months gives a fresh and bright, fruit forward style with supporting textural mouthfeel not usually associated with this style.
Yeast type: Wild Yeast
Maturation: In tank on lees for 5 months.
Bottling Date: August 2022
Tasting Notes: Refined natural fruit flavours emphasising lively fresh apple, citrus and floral notes. The natural acidity lifts the crisp palate leaving zesty lime notes.
