Paralian Chardonnay is a Single Vineyard Chardonnay, fruit sourced from ‘Bowyer Ridge Vineyard’, Adelaide Hills grown by the Rosback family.
Irrigated vines, on mica schist, North/South aspect 480-495m altitude.
After both working in Burgundy now 10yrs ago, Paralian have a real passion for Chardonnay and wanted to embark on making a single vineyard wine from the Adelaide Hills. After much negotiation, they were very lucky to be able to access some fruit from the Bowyer Ridge Vineyard.
Hand-picked fruit, whole bunch pressed, the free run only was drained and fermented in French oak barrels - 33% new, majority in larger 500L puncheons. 100% wild ferment, left on lees in barrel for full malolactic fermentation while stirring regularly to build texture.
Intense and complex aromas of flint and grapefruit with stone fruit overtones. Palate wise sees layers of phenolics supported by fleshy fruit, lees complexity and streamlined acidity. There’s touches of exotic white florals, fresh yogurt and sleek oak, with a comforting almond meal line. The drive of palate is long and flavoursome, a hallmark of this vineyard.
