Wilson & Morgan 12yo Caol Ila Cask Strength Virgin Oak was distilled in 2008, finished in virgin American oak, bottled in 2020.
Known as “Mr. Consistent”, Caol Ila is Islay’s largest distillery, pumping out 6.5 million litres a year. While they use the same malt as their smaller sister distillery, Lagavulin, the distillation regime at Caol Ila produces a lighter sweeter spirit, famed for its white sugar and peanut butter character. This bottling has had a 12 month finish in virgin American oak barrels.
Nose: Peanut shells in a Louisiana BBQ house. Hot sand on a desert highway.
Palate: Surf and turf is on the menu. Slow cooked brisket seared on a coal fired BBQ. Juicy Crayfish cooked in its own juices and whole lemons. Japanese rice cracker mix with wasabi peas thrown in.
Finish: Lingering white shellfish meat and vanilla
