Pale straw in colour with gold tints. Expect lifted aromas from the wild ferment of lemon and lime, with roasted custard apple and glace pineapple and underlying notes of raw fennel bulb, finished with Thai basil and nettle leaf. The palate arrives with generosity and finishes zestily and freshly. Flavours of lemon-lime, grapefruit pith, pear and fresh basil and underscored by a moreish chiselled mineral texture. Complementing the fresh acidity is a subtle custard cream texture which lingers on the finish. A splash of Garganega adds an extra dimension of texture and interest to the palate.
