Fermoy Rose - WA 

Varietals: 67% Shiraz; 14% Semillon; 9% Cabernet Sauvignon; 6% Chardonnay; 4% Pinot Noir

Appearance: Pale coral pink.

Aroma: Lifted aromatics of blueberry, redcurrant, rose water and nougat.

Palate: Vibrant fruits of redcurrant, cherry, rosehip on the front palate lead into some more textural notes of lemon curd, Turkish delight and aniseed spice, before a soft and delicate acid line ensures a long, textural, and mouth-watering finish.

Oak Detail: A portion of the blend was whole bunch pressed direct to seasoned French oak barriques for natural fermentation and subsequent 4 month’s maturation on ferment lees to build palate weight and texture. The balance of the blend was fermented cool in stainless steel to retain freshness and aromatics.

Cellaring: Ready for immediate drinking and will continue to drink well over the next 2 years.

Food Pairing: Perfect as an aperitif, or drink with charcuterie, olives, or smoked salmon blinis.

Acidity: pH 3.21; TA 6.5g/L
